There's no doubt about it. MadridMan LOVES (most) Spanish Food!

Basic Staples for a good Spanish Diet:
Pan: bread
Tortilla de Patatas (a.k.a "Tortilla Española): fried potatoes, eggs, and (sometimes) onion
Aceitunas rellenas de anchoas: green olives stuffed with anchovies
Aceite de Oliva: olive oil (extra virgen, of course)
Ajo: GARLIC! Mmmmm....
Cebolla: onion
Vino tinto: Rioja (Gran Reserva, of course)
Vinto Blanco: Albariño, Ribeiro, Rueda, Cava (MadridMan prefers white wines!)
Meat Main Course List:
Cochinillo: roasted suckling pig
Cordero: lamb
Ternera: veal
Rabo de Toro: bull tail or ox tail
Pollo asado: roast chicken
Pollo al ajillo: roasted chicken in garlic
Seafood Main Course List:
Calamares: squid
Pulpo: octopus
Paella: safron rice with seafood & chicken (among other varieties)
Rape: monkfish
Merluza:
Bacalao: cod
Sides/Starters: (often appear as tapas)
Croquetas: croquettes - made with jam, cheese, chicken, whatever!
Arroz: rice - either white or with added safron
Patatas Fritas: olive oil fried potatoes
Tapas:
Gambas: shrimp
Gambas al ajillo: shrimp boiled in garlic & olive oil - a MadridMan Favorite!! (y luego, ¡a mojar!)
Berberechos al vapor: steamed cockles, a species of small clams
Almejas: a species of small clams
Mejillones: mussels
Morcilla de Burgos: blood & rice sausage
Jamón Serrano: a variety thinly sliced, cured ham
Queso Manchego: a variety of cured cheese, strong
Queso de Tetilla: breast-shaped cheese from Galicia - creamy, mild and soft
Aceitunas rellenas de anchoas: anchovy-stuffed green olives
Tortilla de Patatas (a.k.a "Tortilla Española): fried potatoes, eggs, and (sometimes) onion
Patatas Bravas: diced, boiled potatoes with a spicy red sauce on top. A MadridMan Favorite!
Calamares: fried, breaded squid - often served in a sandwich
Pinchos Morunos: skewered & grilled pieces of spicy, sauce-covered pieces of chicken or pork
Desserts:
Arroz con Leche: milk and rice with cinnamon, sugar, and lemon peel
Tiramisu: Tiramisu cake (actually, it's Italian, but popular in Spain)
Leche Frita: Fried Milk!! firm & custardlike
Sorbete de Limón: lemon sorbet
Tarta de Santiago, FLAMBEADO: flat-ish, firm, almond cake. Best if flambé with liqueur. It's otherwise very dry.
LEAST FAVORITE Foods by MadridMan:
Espárragos Blancos: white asparagus
Calamares en su Tinta: squid in their own BLACK INK. YUCK! (actually, I'm afraid to even try them)
